AUBURN, Mass. - One local business is welcoming anyone who wants to learn about maple syrup as the maple sugaring season comes to an end.
“Do you want to taste it? We’ll taste every step of the process,” Maria Hopper said as she poured samples of sap for guests.
Pure BS Maple Shack offers free tastes and tours of the process they’ve mastered through years of work.
“What we’re so lucky about is it’s a neighborhood operation," Bruce Hopper said, "so we literally tap all over the neighborhood.”
Bruce Hopper started tapping maple trees in Auburn neighborhoods with his friend Ed Sullivan in 2007.
Now, Pure BS has extended their taps out to Western Massachusetts.
“Up in the Berkshires we just did 3,500 feet of main line," Brennan Hopper said. "So this all drains into, I want to say, it’s a 500-gallon reservoir tank.”
Bruce continues to fuel the fire in their boiler which they fondly call "Sap-enstein".
The Maple Shack typically taps trees and boils sap from mid-February to early April. But this year the season was shortened by a couple of weekends.
“Because of the weather this year, it got cut short," Brennan said. "You want to have freezing temperatures at night and above 40 during the day.”
Outside of maple sugaring season, Pure BS Maple Shack works all year with restaurants and breweries to give them a local maple taste.
“We’ve been able to just ride the wave in Worcester with what I call the food renaissance that’s going on,” Bruce said.
As the business grows, Bruce also works with schools and different programs across the state, giving lessons about maple sugaring, tapping trees and using nature as a resource.
“Even in an urban setting, or a suburban setting, we’re blessed with nature," Bruce said. "Pun intended, I would say tap into that. Tap into that sweetness. Tap into just the beauty of nature.”
Sunday, March 27 marks the last day of boiling and tours for the season at Pure BS Maple Shack. Their products are sold all year.
