A new seafood restaurant is coming to downtown Burlington. The Hilton Burlington Lake Champlain, which will soon become the Hotel Champlain, Curio Collection by Hilton, announced that a new restaurant will begin construction later this month on Battery Street.The new spot, called Original Skiff Fish + Oyster, is slated for a Spring 2024 open date, according to the Hotel Champlain. It will feature a selection of fresh seafood with a rotating seasonal menu.The hotel said the restaurant will be "intentionally playful, campy, and nostalgic" while "paying tribute to the heroes, hustlers, and helmsman that lived amidst the lakes, harbors, inlets, and waterways."The restaurant will be run by Heirloom Hospitality and run by Chef Eric Warnstedt, with seafood delivered by Ethan Wood of Wood Mountain Fish.The hotel said it expects to provide more details about the restaurant in the coming months.
