Umami? What? Okay, let’s get to that first. While the term may be new to you, the term dates back to the early 1900s and refers to a taste— one of five tastes which also includes sweet, sour, bitter, and salty.
Umami means “essence of deliciousness” in Japanese, and its taste is often described as a meaty, savory flavor unique from any other taste. It was first discovered in 1908 when Professor Kikunae Ikeda identified Glutamate as the key ingredient that gives kombu seaweed its umami flavor. That’s when he discovered that the taste is actually a singular flavor commonly found in tomatoes, cheese, and meats, along with some vegetables.
In 2002, specific umami receptors on the human tongue were discovered. Thus begat umami.
Tomatoes, cheese and meat sounds a lot like cheeseburgers, and a burger restaurant dedicated to the flavor made perfect sense.
Now, Umami Burger, with a location on Colorado Boulevard in Old Pasadena, has announced a menu of new and returning food and drink items, available starting March 23.
Returning to its 2009 roots, the “Newmami” menu brings back items from the original Umami Burger selection with updated buns and patty recipes, Impossible “meat” options, sides, appetizers, and desserts, while introducing new items and combination boxes.
The boxes range from The Umami-FRY ME Combo, The OG Umami Sampler, The Umami Deluxe Combo, to the All About The Chicken Combo.
The new menu will also feature:

Umami Burger – Umami sauce, 4 oz. smash patty, lettuce, pickles, tomato, caramelized onions, American cheese

Truffle Burger – truffle aioli, truffle fondue, truffle glaze

Pastrami Burger – pastrami, pepperoncini, sauerkraut, 4 oz smash patty, Dijon mustard, provolone

Sunnyside Burger – bacon strips, fried egg, 4 oz. smash patty, truffle aioli, tomato spread, lettuce, American cheese

Texas BBQ Bacon Burger – 4 oz smash patty, bacon wrapped onion ring, classic sauce, romaine, tomato, pickle, American cheese, BBQ Sauce

Umami Patty Melt – 4 oz. smash patty, with caramelized onions, provolone, American cheese, and a classic sauce.
“We took this time during the pandemic to really reflect on our current menu offerings and take a deeper look on how we can continue to bring the most craveable burgers to our guests,” said Vincenzo Rossy, Senior Director of Openings at C3. “We wanted to bring back what the original Umami Burger fans knew and loved, while introducing fun and unique menu items to the concept.”
Industry veteran Jason Jeffords has also joined the team and has created a menu of milkshakes to accompany Umami Burger’s savory menu items, with elaborate, fun add-on toppings and options to make it “adulting” with booze.
His new sample flavors include:

Banana Matcha Shake – vanilla ice cream, matcha cream, banana, and whipped cream (add spiced Bacardi, coffee frosting, Coffee Nut M&Ms, and a tiramisu donut)

Piña Colada Shake – pineapple ice cream, coconut cream, coconut shavings, and whipped cream (add Malibu Rum, fresh pineapple, coconut frosting, and puffy pastry pineapple turnover)

Cinnamon Toast Crunch Shake – vanilla ice cream, cinnamon syrup, sea salt, and whipped cream (add Fireball, cinnamon frosting, crushed Cinnamon Toast Crunch cereal, and a waffle)

Rocky Road Shake – chocolate ice cream, toasted marshmallow, walnuts, and whipped cream (add bourbon, chocolate chips, fluff marshmallow, chocolate sauce, and a brownie)
“With Umami’s new boozy milkshake menu, we didn’t take ourselves too seriously, and weren’t afraid to put interesting flavors together,” says Jeffords. “I hope to give guests at Umami a new, memorable experience when it comes to their drinks, whether they opt for an umami-forward classic cocktail, a local craft beer, or one of our elaborate shakes to accompany their burger.”
