The first run of a new fast-casual restaurant is opening in Carlsbad Village at the end of the month in State Street Commons, the former antique mall turned mixed-use development across from Campfire restaurant. Joining Lofty Coffee and another incoming location for Nick’s Restaurants, Pure Taco is the creation of Urban Plates co-founder John Zagara and Clayton Wheeler and Craig Applegate, who co-founded Bressi Ranch’s Casero Taqueria.
Calling it a “modern American taqueria”, the restaurant will have wrap-around patio and an central bar pouring specialty margaritas and local beers. While its menu of tacos, made with hand-pressed tortillas, will include traditional fillings like al pastor, grilled steak, and fish, it’ll also make a detour into other global cuisines; expect to see taco versions of Korean bo ssam and Vietnamese pho. .
